The Win8.1 WS6's are 32 bit hardware and will never take a 64 bit o/s load. They never made a Win10 image for that hardware, they updated the guts of it to 64 bit and did a Win10 version. They still sell the Win8.1 32 bit model also because a lot of Simphony customers have still not upgraded...
Final bios is Q2012F which someone just posted on this board. There should be a version that runs from a thumb drive, or else take the files and put them on the root of the cf and reboot, then remove them from it after the update runs. Shouldn't have to remove doc or anything like was suggested.
Micros used to sell a kit for this, the hdd mounted to the back of the lcd, I suppose you could use duct tape in a pinch :^). Sata cable was standard but power was custom, not sure how you would sub for that. They had a POSReady 2009 and a POSReady7 image for them.
Oracle E7 release 4.2 was broken and caused major customer issues, probably why upgrades were halted. 4.4.2.1 was released a few weeks ago and fixes the issues. I would get a standalone reader from your cc processor and then figure out what you want to do long term.
Sorry I don't know but I will say after reading about 50 posts here today that when people ask for help with Micros it would be a good idea to give version of Res, type of WS (4/4LX/5/5a/6) and any other relevant info. It makes coming up with answers more likely.

Going from 4.x to 5.6 or higher does require preconvert, not sure why it would fail if you have done that step. I've seen the same issue but it was due to not running preconvert.

I have used the Oracle images to repair units, they work. I don't know of any way to use a custom image - I tried some various imaging software without success but one customer of mine claims to be doing just that using Macrium software.

The Oracle 720 is a DT Research DT317BT, the 721 is a DT317CR. You could maybe find a distributor to sell you the DT tablet for less. Any Windows device can theoretically work with Res but making everything work is the trick.
It's a common problem with the WS5 and I don't know of a permanent fix. I usually try two things:
1. power drain - disconnect power and all other cables, wait a few minutes, reconnect and reboot
