Did you create the eps file? What program was it created in? Do you get an error or does it just look bad? If you don't have a PostScript printer, eps files will look terrible when printed from Quark, but as long as it's OK in Usage your service provider should be fine.

I would take a closer look at the things that are coming out wrong. Is there something they have in common? - Check all the fonts in your file. Is the text that's changing the same font or is it random? Do you maybe have 2 versions of the same font active by accident? (I've had, for example...

It's generally better practice to use Layer Masks rather than the eraser. That way you don't alter the original picture and it's easier to go back and change something. Just toss the mask and make a new selection instead of starting all over with the eraser. You should give it a shot.
