I don't think your issue is going to be host OS related.
You say the switches are all daisy-chained, is there a single link between each or are you running multiple trunks? Can you talk to any of the other switches? Which switch is the gateway connected to?

Maybe you should kick off a cleanup agent on the mailbox store. Expand System Manager to the 'Mailboxes' underneath your mailbox store. Right-click on it and 'Run Cleanup Agent'.

You can give the manager full mailbox permission, then in outlook on the Manager's PC, go to Tools -> Accounts, double-click exchange server and on one of the tabs there (I have XP in front of me so I don't remember the name) you can open additional mailboxes.
