If you make you images Inline insofar as they are pasted into a text thread then you could hyperlink to the Paragraph that the image is pasted onto.
That would work

That makes sense that it doesn't hyperlink page numbers as epub is a continuous display, insofar as it doesn't have page numbers or pages, because of the various ereaders and different screen sizes and because of it's ability to resize the type etc.

Yeah you can sort of do what you are asking via the text variable option.
eg have a chapter title which uses a style sheet and use that as your running heads or footers...

I don't believe people should EVER send out native file to ANYONE, that includes the client (unless asked for) this opens a can of worms regarding Version control etc. i.e what happens when it comes back for re print and the client goes direct to printer for changes, then further down the track...
Ummm, maybe because I am already running 17 G5's and so the change over to PC's, so not an option as I would need have to buy all PC Software and PC compatible fonts. (opentype, where the bulk of my fonts are type 1).
