So the 2K box is just a member server? If so then the 2K box should not affect users and changing the passwords. Also make sure the clients are truly loggin on to the domain and not logging on using cached information.
Have you checked the Local Security policy on this system? Or if it is in a Domain you may want to check the Group Policies. Group Policy and or the Local Security policy has settings for the Recent Documents folder. It is worth a try.
