You must restore AD & System State in Directory Restore mode (F8 during boot). May I suggest you check on the web using "2000 Directory Restore" as a search for how to proceed.

Did you have the printers in their own OU? Sounds like somebody with admin privileges deleted it. Have you checked on Technet/Google for this problem?

I think you need to deny delete permissions on the folders only - in properties, click advanced, unclick inherit from parent..., click copy, then Add your own special permissions, delete those you don't want, modify others. You'll need to think through how you want to apply permissions...
