Are you delivering to PST?? If so how big is your PST file? If over 1.5GB then this is getting to the un-predictable size for a PST and it is time to archive off some of your emails.

So far there has been no paterns at all. In fact one user who may have ended up in the deleted Items can send a message later in the day which goes into the inbox as expected.
