Pathfinder should be able to get you to create a gap, position a box on top of the shape roughly where you want a gap, select both objects, choose "minus front", the tidy up where you need to with the direct select tool (white arrow).
...on the already outlined font, it might also help...
...but it really depends on what the selected object is too.

OK..in the symbols palette, duplicate one of the symbols...
...drag to artboard and edit the symbol on the artboard by double clicking it.
...this will go into isolation mode.
...make edit and double click anywhere away from the symbol to exit isolation mode.

Essentially all that really matters is that you have a symbol in the "Symbols" palette (window > symbols) of the document "arrowheads.ai".
