If you're already using an exchange server you don't need fetchmail. There should be a "IMAP connector" plugin available that does the same as fetchmail does:
Connects to the BCM via IMAP port 143 (use mailbox number as user) and puts the received messages into a users mailbox.
callpilot can't do that. but you could run "fetchmail" on any server and let it retrieve the callpilot mailbox and save the messages to the normal email inbox.

No, SIP phones can't be used.
Nortel phones use a proprietary protocol called "UNIStim"
H323 is used for Trunks and also some H323 clients may connect. But SIP is only supported for trunking between other Nortel PBXs.
You should apply the following three patches:
