Its officialy Supported to install OpenSSH on the VIO Server. ( OpenSSL -> Linux Toolbox, OpenSSH -> Expansion CD )

It Depends on your Workload and Performance Requirements.
If you use HACMP i wouldn't use VIO, because you need two VIOs to eliminate SPOFs. On Performance Reasons you need 1 CPU and min. 2 GB on each VIO Server.

Your cd0 is not in the Systemprofile.
If you add the cdrom by DLPAR, then the cd is gone away on next reboot.
You can only add your cdrom with dlpar if AIX is running.
You can only set the bootlist to cd0 if the cdrom is included in your system Profile.

VPN usually uses mtu Size 1492, or smaller. Standard MTU Size for Ethernet is 1500. Take a Test by changing the mtu Size on the Interface to 1492, or activate tcp_pmtu_discover=1, udp_pmtu_discover=1 ( no Command )

Are you sure that your disks hdisk6 and hdisk7 are not on the same VIO Server ???
It looks so, because the two disks in vg001 are both online.
Check with lspv on vio and LPAR your PVIDs to identify which disk is on which vio server
