Just follow install guide very carefully and you'll be fine. I think your biggest challenge would be configuring IOS dial plan components like dial-peers, T1 channel groups, basic routing. You definitely need to know basic IOS commands.

In your case before deciding to move to VoIP find VoIP providers, get their service pricing, and see how much you'll be saving over PSTN lines. Like you said it may not even worth moving to VoIP.
Just read carefully the document in the link provided by rtfmdude. It has all the info to install unity. Unity does not use cisco-taylored OS. It runs on regular Windows 2000 server. To run unity as unified messaging you will need sibscriber license.

I have a phone that have MWI on all the time and little blinking envelope icon on the phone. The phone is not setup for VM. Resetting the phone does not solve the problem. I suspect there are some SQL inconsistencies either in CCM or Unity.

Sometimes if you run port scanner against CCM server (some versions) it will crash services.
I'm actually thinking of getting a very simple GW with FXS/FXO port so I can test dial plans in lab environment. It is very hard to test during normal hours without possible disruptions. That way there is enough time to test any changes.
