We're experiecing a lot of the same issues with OPOS drivers and haven't been able to get this 100% stable. If anybody has some good input to share I would also really appreciate it. Serial is unfortunately still the way to go for us, but would love to have an ethernet option that's just as stable.
You can run Aloha Kitchen on windows, also VM. However, what good is it for you if you don't have an Aloha system with a dongle? KDS itself doesn't require a dongle, so I'm assuming you mean the HASP dongle.
Do you mean like taxes? Doesn't that work if you just price the modifier itself instead of the root item? This is how we do hotel packages. In europe it's often inclusive taxes, it works perfect.
We do sometimes set up mutliple QC's with various options (with or without certain components) or make a component optional. The pricing thing however you can't beat. Most of our customers actually like that in a restaurant setting, but for banqueting not ideal.

We use Quick Combo's a lot for this.
Maintenance > Payments > Promotions.
Select the Quick Combo and then in the type specifics, use 3 components. One for the Entree, one for the Dessert and one for the drink. We use Auto-apply most often, makes it really easy.
Yes, you can use the 24 hour mode. This used to be very unstable in the older version, but we have some hotels running 6.5 and to be honest, it works pretty well.
Aloha POS is windows based, so you would need windows based hardware. Also consider the peripherals you need. We have good experience with J2, IBM, Orderman, Micros (indeed) and just normal windows based hardware with ELO's.
