If the sequence generators are from different mappings, you have to open each of them and modify individually.
If you have more than one sequence generator in one mapping ,you can edit transformation and modify all the sequence generators selecting them from the drop down list.

To get a field from another table,you need to have a primary key or primary key combination in your target table and also need to use that in lookup condition in the lookup transformation.
Otherwise there can be multiple value in the lookup table for a single input from the source table...
