If I understand the question correctly there are two things you need to do.
1) From the boss's e-mail account go to Tools, Options, Delagates and give the admin permission(s).
2) From the admin's e-mail account go to File, open, other users folder - enter the bosses account info.

I am using BE 8.6, so it may not be the same. Have you tried view by media instead of by volume? Mine comes up in date order (oldest at top).
If I view by volume (server) then expand they are in date order.

I have event notification turned on and want to receive the notices . . . just not every 15 minutes. I have not been able to find anywhere that you can change the fequency. Does anyone know how to do this? Maybe a registry hack?

I just bought an AIT 1 drive (which replaced one that had been in daily use for 4 or 5 years) for about $650. If you need to go really, inexpensive, use it with NTbackup. It will get the job done. You can back up exchange with it.

Do you use deleted item retention? ie: mine is set to 30 days, which means no matter what I delete today it will remain in deleted retention for the next 30 days.

I may be wrong here but I believe that to use rules the client must be open. You could still do the old employee's mailbox with alias's of all the old employees.
System failure, had to restore IIS server. Everything else seams to work ok. Now we are unable to log onto OWA. I receive the mailbox login, then the NT login with password, but it just repeats. I have tried to use the domain\username with no success. Exchange is on a different box and works...
If the goal is just to notify people that this employee is no longer with the company, you could turn on OOF and put whatever approiate message you want.
