Make sure your user name is a member of the OLAP Administrators group...and that the MSSQLServerOLAP service logs on as a user who is a member of the OLAP Administrators group...only a member of the OLAP Administrators group can process a cube...

Search MSDN and the MS Knowledge Base...there is an add in available for DTS 7.0 (SQL Server 7.0)...it contains a package object for updating and processing OLAP cubes :)

the user account that you are logged on as has to be a member of the OLAP Administrators group...only user accounts in this group can administer analysis services (process cubes, etc)...

you have probably figured this out by now, but I just joined the list...the ROLAP tables are created and stored in the database that serves as the data source for your analysis services database...ie, if you create a new analysis database and select 'mydb' as the underlying database, analysis...
In SQL Server 2000 there is a DTS package type that processes a cube...I dont know if SQL Server 7.0 has this but I think it is new to SQL Server 2000. If you cant migrate to SQL Server 2000, you might have to use DSO (Decision Support Objects) and write code to refresh or process the cube...
Why wouldn't you want to run a stored procedure? More secure and easy to implement...I would wholeheartedly recommend the stored procedure route...
