You have to remove the line appearances (just change them to "Blank") on 9.0+ systems in Basic/Partner mode. That will stop the incoming calls to ring on those phones. To make an outside call, you will need to dial 8 + the line number (801 for line one, and so on...).

Is this system in Quick (Partner) mode? If so, in the Button Programming section, near the bottom of the screen, put a check in Modify ALS programming, then press the Clear ALS button. After that, click on the Intercom buttons above, followed by the Line buttons. That will set your ALS order...
If your control unit is still running 9.0.0.0 829, please upgrade to the latest, 9.0.5.0 972. It may fix such issues. Also, I never trusted Intuity mode.

And when the time profile expires, it will just go to the Default for the incoming call route, which is also the Main hunt group. So then, the receptionist would just need to press the HG OOS button once more, any time after 9am to put the night group back in service.. got it.

Is there any way to use a time profile to have calls automatically go to a night auto attendant, but then to be able to manually switch off the night attendant with a button the next morning? From what I've read, this doesn't seem possible in embedded voicemail.

You can easily upgrade/downgrade the switch to work with the server. Once the switch is added to the system through Shoretel Director, it is usually automatic. Sometimes it may require a reboot of the switch, though.
