i wouldnt use them either. My impression of these is for voice use under conditions where you want to change the location constantly and dont know how to use a punch tool.

yes the distance is limited to 5 meters. you can add hubs or extenders to increase the distance. You should use them when you need the devices further than 15 feet.

you need to terminate on pins 1+2 and 3+6 for ethernet. I have never seen an ethernet jack like that before it looks like your losing the twists.

most furniture ive seen has a seperate chase to keep 110v and cat5 seperate. Have you considered using sheilded cat 5 for this drop? The armored cable should block the EMI's from affecting the data but i wouldnt do it this way unless i had too.
Use b for both. This is the standard. Either will work for both as long as you keep both sides of the cable the same.
The only time i've used 568a is for crossover cables or if someone ordered 568a mistakenly
