ShoreTel has a tech note on implementing with the Definity. If you know the IP Office, it is pretty easy to take that and relate it. Try searching for it on wwww.shoretel.com under the Support tab. It was a pretty easy integration.
I just integrated an IP Office and ShoreTel but I didn't use IP trunks so I can't help much. I used a T1 switch and a crossover cable to the T1 card on the IP Office. There was an application note for the Definity that I just used and made it work for the IP Office.
Just build a module in VM that has a generic action with the message recorded. Then connect it to a disconnect action. Just make sure you set up your incoming call route to go to the module in VM.
You might want to check to see if the User showing up in the display is transferring the call. It sounds like they are doing a consultive transfer and hanging up.
