where do I go in SBCE to find outbound call logs made from SIP trunks?

I am only looking to prove that calls hit the SIP trunks via SBC,

if that is available in CDR, so yes please.
 
CDR has the capability to track which trunk a call goes out on if it is routed through CM and configured appropriately. I can't speak to how SIP station work but would think it would be the same. Do you currently have a CDR solution?
 
I doubt that's possible from the SBC. SM has CDR which, if configured, would output somewhere and you'd get records. Typically, the PBX level CDR is more standard for people's use cases.

Whether it's CM,SM or the SBC, none of them do it without explicit setup and logging externally.

Solarwinds has a RTCP monitoring tool that works with Avaya for voice quality network monitoring (as do many others - that's not an endorsement!) which would have call records +quality for the voice endpoint, which if it's the SBC, proves your idea out. They have a month free, so that could be a thing for you.
 
The ipcs logs located here may shed some light.(you will have to activate a trace first in the web interface , on your internal interface)

/archive/syslog/ipcs/ipcs.log

There are various other logs that you can interrogate also , but as already stated traceSBC will give you this info , the hit "w" to write the trace as a .pcap .
