Not sure what kind of activity you want to track. I'll assume you want to know what calls are placed or received.
Your best option is a CDR (Call Detail Recording) server and software to record all inbound and outbound calls. You can track both internal (station to station) and external calls. There are multiple brands that are compatible with Avaya.
If you're troubleshooting something specific... list trace station xxxx will show you what's happening during a call.
