Like Dan says, perhaps working out 'how wrong' the date is might give you a clue. Is it consistently wrong?
Also, have you looked at the headers on the emails? You can track the progress of a mail through various servers (mine for example goes from my excahnge server, to our ISP server and then on to the recipients ISP/mailserver). You might see something there could it be your ISP, assuming there is one.
That s were the problem is its in the header each time that person send s or receive the date is off. As for the server it has the correct time , everyone on the network has the correct date except for that user.
If the dates are wrong as well, I've seen the "short date format" in Windows cause very odd dates. I don't remember the particulars because it was pre-Y2K.
