IP406 R5 V2 5.0 Voicemail to e-mail broken on Server 2003 64 install

I've upgraded and moved my IP office to a Server 2003 64-bit system.
I had the voicemail to e-mail working fine on my older XP box via an in house smtp relay.

I've configured the SMTP settings in the control panel for VM PRo
I've switched the button from MAPI to SMTP in the voicemail pro software

I can see the email being sent to my relay, but it errors out with.
501 - <Non-mailuser> sender address must contain a domain
domain cannot be resolved

I'm pretty sure it's because of the non mail user and the settings not being saved or applied in the registry.
I've tried adding user@domain in the emailmailbox and emailfrom fields but it's still not working, does anyone have any suggestions?

Did you enter a from mail address in the VM Pro MAPI control panel page?
I have found in the past that SMTP won't work if that field is empty although MAPI isn't used at all.
