There is no way to set the time on an IP Office frrom DS series handsets (this was possible on the now defunt DT series handsets).
The IPO will set its time from the PC running Manager when it is confirgured & then keep running with that time untill another programming change requireing a reboot.
Let it see a time server, eg. Manager for a short period. I don't know how good it internal clock is but once it has the correct time it should maintain it.
You can set the time via the older 4400/6400 phones with a MENU key. You first need to configure the phone as a system phone through the user setting in Manager (User | Telephony tab).
Then on the phone press Menu | Menu | Func | Setup and select Date or Time.
Enter the new value. Use the * key to enter a : in times. Use the # key to enter a / in dates.
what i don't understand is that you can't see the time on an 56xx phone
if the phone is restarting you see the time and date in the top right corner flashing once
so it recornises the time and date and showing it for a split second
but when you make a button it's on the top left corner
something in me say's it must be possible to show the time and date without a button
