Personally, I think creating one large Frame file kinda defeats the purpose of the book file. The book allows you to have smaller Frame files that, combined together, appear as one large file in your output.

Depends. If the file creator didn't use a password when he set security, I think you should be able to remove it. Just set the security options to No Security and save the file.

Why not just use Acrobat/Reader to do your presentation? I've done many that way using the full-screen option in Reader.
That's just easier for me because I work in a file format (FrameMaker) that I can easily convert to PDF.

When we used Word, I created some pdfmark code that created bookmarks for all the other files in the guide. Worked pretty slick.
One big advantage for readers is that they're only accessing one chapter at a time, so it opens much more quickly than a pdf of the entire guide would.
