We had the same problem, however the latest version of activesync sorted it.
Did you remove the old version first? Have you tried removing the partnership and creating a new one?
Does his laptop have firewire? This would be much faster than USB.

It all depends how determined someone is to get in. If possible you could use static IP's and stop DHCP broadcast. Then only allow specific IP's access...
Is it a roaming profile? If so there will be a cached copy on any PC he has logged onto. Dont logon onto it as the user though as it will copy over it with the new one.
If its not roaming and they havent been backed up then I dont think there is anyway of getting it back.
