Well I've discovered that 2K DC's can not hold the FSMO roles in a 2K3 domain, so therefore in the event that something horrible happened I would not be able to seize the FSMO roles to a 2K DC. I'm thinking we will have to go with at least 2 2K3 DCs in order to be safe.
