We currently have a 2K domain with 4 2K DC's. We are about to upgrade the domain to 2K3 with one 2K3 DC.

This will leave 3 2K DC's and 1 2K3 DC in a 2K3 domain running in mixed mode.

My question is: If the 2K3 DC was to go down, are the 2K DC's sufficient to allow the network to run as normal? Can they sufficiently hold all of the AD information for a 2K3 domain? Would it be considered "ok" to run like this with only 1 2K3 DC? Anybody got any links to some MS docs that explain this?

Well I've discovered that 2K DC's can not hold the FSMO roles in a 2K3 domain, so therefore in the event that something horrible happened I would not be able to seize the FSMO roles to a 2K DC.

I'm thinking we will have to go with at least 2 2K3 DCs in order to be safe.
