The easiest way (assuming you have access to open both mailboxes) would be to open both mailboxes in Outlook select all the messages you want moved and just drag and drop them into the other inbox.
I would imagine the services account (which ever account you are using to start things like the information store) will still have sufficient permissions or the next time you reboot your exchange server wouldn't work because the services wouldn't start.
So, Log in as that account and give...

If you can't reboot it, try stopping and starting the World Wide Web publishing service.

Are you using roaming profiles? If so, you may find the ntuser.dat is corrupt. A sign of this is "Rules Wizard" not being present.
Try giving her a new profile to see if this helps. Remember to take a copy of her current profile though, just in case!

There are serveral references to the name of the backup server in the registry in HKCU\software\veritas and HKLM\sortware\veritas

I think you need to open active directory users and computers and inside a users properties > email addresses there will be the option to "automatically update email addresses based on recepient policy" make sure this is checked.
I don't know a quick way of checking...
Inside exchange admin, go to tools > options > Permissions and check that your default domain is set correctly.
This might be way off the mark, but it's worth checking!
