Updating code on a stack of 3 5510's takes about 68 seconds from traffic stop to traffic restart. Management IP takes longer to come back to life. Granted you have to do it twice if you need the diag. I have not timed a stack of 8. Doubt it would be drastically longer.

If the IP addresses that you use are all in the same range, make it one VLAN. If they are in different ranges you need to set up routing between the 2 VLAN's, and set up DHCP forwarding as described above.

I believe that the 8600 ships setup for a null cable on the console port. There is a DTE-DCE switch on the SF console port, so if your cable does not work, try flipping the switch.
