Boot the server to a command prompt only. Then go in and delete the folders and/or files in DOS while they are inactive. This works well for active virus files as well.
Go to your Notes 5 Admin client
go to the configuration tab
open the server twistie
click on the configuration button
click edit configuration
go to the notes.ini settings tab
choose to set/modify parameters
type in for item: MAILDELIVERCDorMIME
value: 1
