Came across and issue with QuickFill that I can not seem to get around.

I don't know if this will help, however, check the standby in the power options.
Maybe you could disable it and see if that helps.
I don't know if the BIOS setting for standby or such would help but you might one check it out.

components. Is is showing the cdrom when when your not having issues or after a lock up?

(I had the raid driver installed in windows)

There is a lot of good advice here, but I would like to add
that I NEVER burn on cd-rw as I find more isses with that then with cd-r's.

A couple of words of advice when burning VCD's.
First braddds is correct about adjusting the maximum speed.
Second.. make sure you are using a good quality cd not one of those 100 cds for $4.99 spools.
