You can select objects and do a Send to Back. There is also the option of placing the information on a background page. There is also the possibility of adding the shapes to a layer and then send that to the back.

Visio likes to have ends connected, so that is why you have the odd tail, you may be able to just move the end around to eliminate the bend, but the next time you move the shape the line is attached to, the tail may reappear.

Lines can have line ends, both at the tip and the tail. Check out the Line Format dialog.

I am not sure why your links are breaking, but if you assign a unique key, like a product id to a shape data and then use that product id in the spreadsheet, you should be able to automatically link the data based on the key. |This is under the data menu.
