Oh ok. Well that is ridiculous. This is a spreadsheet that we will share with our customers. I don't want them to be changing information.

You need to add those extra cells to the Data Validation list criteria.
For example: you currently show cells $A$10:$A$20. Now you need to add through A30. You just change the $A$20 to $A$30.
