Yep norristechs is correct (even if parameters are set to 256 colors).
The only way I've found to get 16bits color on slow network is by using rdesktop (a unix tse client) which can also use intermediate resolution (I'm currently using 960X691 which fits in my 1024X768 local machine desktop)...
Problem solved.
It seems that even if windows doesn't ask for it, rebooting the server while the remote access interface is de-activated does the trick. NAT works fine now.

Most of the games can be removed using the add/remove software of the control pannel. Some games don't appear in this list, usually they have an unistaller. Some don't have that either, usually you can just delete same manually.

win2k server has many things that can prevent it to be normally on the LAN, try to shut down everything on the server such as DHCP, DNS, WINS. Alsao check all the protocols installed. Check the RRAS status. ALso try to give the server manual TCP/IP config, just to see if you can ping the other...
