We don't run exchange but our SQL DB is over 500GB. The last test restore we tried was over 300GB. There was a registry setting for the agent that we had to increase the key was "Max_vdi_wait_time". There may be a similar reg key for exchange.
If the only issue is the connection to the client agent the media should still eject. The only time I've seen media remain in the drive and not get placed back into the proper slot is bad media. Have you cleaned the heads on the tape recently, that may help.

If you have no sub directories clicking the plus will not expand. You have to click on the actual name of the directory and this will list the files in the show list window. If you click the version history tab after that you should see all the versions that are recorded in the DB.
I think there are some problems with your ARCserve enviroment. Are you running the correct client agents? How have you established that the tape engine goes idle? The tape engine is either running or it isn't. Do you have any errors in the ARCserve log? Have you checked your NIC cards and...
Are both the drives the same make and model? It could be a block size issue. After your prodution enviroment writes to the tape the test enviroment drive may be looking for a different block size on the media. If you backup to your test drive can your production drive read that?
In the backup window, drill down to the database name that you want to backup. Right click that DB and select Backup Agent Option. You can select differential SQL DB backups there.
