In Exchange System Manager, you can create a new smtp address in recipient policies and apply it to all the users. You can set the new address as the primary and leave the old one in place if needed.
Are you setup to retain deleted messages? You can go to the recovery folder and purge from there. You can also remove exchange attributes from her account and delete her mailbox since all messages have been deleted anyway. Then create a new one.
