Looking at the rules, it doesn't seem like there's an "after being sent" rule that I could use to move the items to Sent Items, unless I'm missing it.

That is correct. We have let it sit for days and it never moves the outbox to the sent items folder. The emails ARE sent...
Yes, it is set to save items to sent items. :) And that's fine, it's not a silly question to point out the obvious, God knows I've missed the obvious before.
