I'll bet you need to have Acrobat (full version) to do that... My understanding is that all you're doing by saving to pdf in Illustrator is taking a snapshot of the file; you need Acrobat to give elements in the pdf document different properties. (be glad to find out I'm wrong, btu Acrobat is on...
