I'm sure you know this, but the UC module must match the version of the phone system. Don't upgrade if it will be higher than the IPO since it won't work.
These UC modules are crappy at best and a simple reboot will commonly trash them. I would suggest taking out the NVMe card and copying...

Trying R12 for a new IP Office 500V2a system with a new client with ten phones. Ran card creation and put in the card and started the new IP Office.

The latest update 11.1.3.1 resolved this for me. After installing it the certificates were permanently updated and the old ones permanently went away that had kept reappearing.
Agreed. Reading slides is not a technical presentation. They could have just said, this is what is different about the upgrade process from before and then had someone available for technical questions...we have a million of them and asking about the upgrade process wasn't high on my list...

You're absolutely correct. Remove the H.323 and add the SIP extension and it will work for you.
You are also correct that you can't hotdesk between the two.

For our clients with SE on HyperV we use the built in windows backup for daily backups and we have never had any issues with it or when a restoration of a file or the entire server is needed.

I'm sure you checked this, but what about forwarding on one or more of the extensions in the hunt group? Perhaps that's why it's random depending on the status of the phone it's being forwarded from?
