Is the wiring from the station cabling a straight thru 568b?

568A, 568B, USOC, ...As long pairs 3,4,5,6, are the same on both ends you could even make up your own wiring code.

so in all reality I could just wire two pairs straight thru

yup, 2 pair in the positions 3,4,5,6 on an 8 position jack, or pairs 2,3,4,5 on a 6 position jack.

You could almost make your own color code, but it's important that the voice pair on 4&5 not be split with the data pair on 3&6 (or 3&4 & 2&3 for a 6-pin jack)
