You might consider setting up a Database Maintenance Plan.
In that you can setup database backups with a variety of options that you can use.
You can select only a few databases or all of them, there are optimizations, integrity checks and fixes you can turn on or off, database backup options, transaction log backups and you can even setup reporting options such as a txt file or netsend. You will be able to choose for how long a backup file may exist before you overwrite it
Then all you do is setup a job(or it might actually do it for you when creating the plan's schedule, haven't done it for a while) and let the job execute the maintenance plan.
Go to Management in Enterprise Manager and then click on Database Maintenance Plans.
