What is the best disk configuration within a SAN

We are migrating over to a clustered E2K3 solution using a SAN with 10 x 73GB disks and two high spec servers.
My question is: What is the best configuration for the 10 disks within the SAN for the database and transaction log files?
We currently have 4 stores with 400 users:
(1) 20GB (200MB mailbox limit)
(2) 14GB (200MB mailbox limit)
(3) 32GB (1GB mailbox limit for management)
(4) 5GB (Public folders)

Is it best to RAID 1 the transaction log files using 2 disks for the 4 stores or use 4 disks and have 2 stores on each?

Would you suggest using the remaining disks all for the 4 stores database logs i.e. 6 or 8 disks or separate them into two sets of 3 or 4 RAID5?

Any advice would be much appreciated as performance is paramount.
