Haven't tried 2007 on a Win2k3 server over TS, but have done with XP and 2003 without problems. Also used Office 2007 a lot on Windows XP RDP without issues.
From the background and knowing how apps get the 'Certified for Windows Vista/XP/Server etc' logo's I'd bet money that you'd have no problems.
Best way would be to fire up a VM and play with it.

We run it and have only come across one issue, which is just an annoyance and won't prevent you from running Office. If a user customizes the ribbon in Office 2007, those settings seem to be saved in Documents and Settings\%username%\local settings\application data.
The settings are then lost everytime they log off if using roaming profiles. Only option is to also copy local settings to the roaming profile, which really increases logon times.
