How safe is it to set up a static map to an internal server and then use the 2000pro to VPN into the internal 2000server? Or should I be setting up authentication via te PIX (520)? I went to this link and was wondering if this page has what I need on it.

You should get an IPSec license for the PIX and terminate and authenticate VPN traffic there. That is the most secure.
