If you want a consistent look for your fonts in your different publications then most probably the best way to do this is using the Font Schemes tool in the Format Publication task pane. If the task pane, ( which in Publisher 2007 is usually located on the Left hand side of the page), is not visible then open this using Format > Format Publication. Click on the Font Schemes tab then as you select a different scheme this will change the font appearance in your publication.
If you want consistency then select a scheme that you like and use this for your future publications. You can even copy a style that you like using the drop down button on the right hand side of the font bar to duplicate which you can then rename as "Favorite" or something else memorable when prompted to and customize this exactly to your desired preferences. To select a different font type within the scheme you have selected, do this using the "Style" drop-down tab on the formatting Toolbar.
This may take a little bit of fiddling about but once you have done this it will be available for all future work that you do on that computer in Publisher.

You may be choosing from the various templates, and are getting the font associated with the template. For full control, choose New, Blank Print Publication, and build your document from scratch.
I thought you were talking about the Font you got in the document, rather than getting a letter than doesn't correspond to the key you press.
Could it be that this was one of those pre-installed versions of Office that comes with the PC, good for 25 uses, and after that doesn't work properly until you buy a license ? They might have used the other programs a total of 25 times, and the "not working" option takes hold now that they're in Publisher
If that isn't the case, it might be worth re-installing Publisher, or doing a Repair/Install from the original media.
