Tracking options with outlook 2003

We use outlook 2003 with exchange 2003 although tracking is not a problem with exchange contacts, im searching for a way to track external emails to customers and clients, but when you select all the tracking options then send the message the saved sent email doesn't have a tracking tab listing dates and times, unlike it does if the contact is in house?
I personally don't think this is achievable, without some kind of additional software, can anyone shed any light?

I see this a fair amount for companies that converted from Groupwise to Outlook. You are correct with your assumption before.
