Time Stamp

I have one user, myself coincidently, that has the wrong time stamp on emails that are returned to me. When they're sent it is correct but recipients are notifying me that when they receive it the time is incorrect(One hour late). I've looked in options locally in Outlook and even reconfigured it then restarted but it shows when I send to be correct. Any suggestions on where I could look on my Exchange server?

Baffled..
