I set my documents to UK English as a default, and this is also the language I specify for the 'Normal' Style. But whenever I do cut-and-paste from a web page, it is always [mickey] US English.

I can easily select and change, of course. But is there any way to teach Microsoft [borg2] software that some of us prefer to be Brits?

What language do you have set for your browser? IE, for example, in Tools | Options | button at bottom of window shows language that will be used. (Although this may be controlled by the OS installtion or IE install.) That may be where the US English is coming in. OTOH what's could be better than US English?

Thanks for the idea, but I checked and found that I've got UK English set. It also says 'Menues and Dialogue Boxes are displayed in US English', without the option to change.

The problems are two:
a) Distinct spellings. It is a great pity that the USA didn't standardise its spelling to its own English as it was at the time of independence. Which might mean that wi awl wud bi wriding acawding tu thi dukshun ov Deputy Dawg, but at least it would be rational. Instead there were some small pointless changes - color, for instance - but most of the unpronouned rubbish was left alone.
b) If you teach extra words to the spell checker, it only applies to whichever verison of English you are using at the time. If there is a way to cross-connect, I'd be interested to know.
