Hi

I wish to test that my exchange and firewall are all working by sending an email to them.

But i dont want to change my MX record until i know that they are working correctly.

Is there a good way to ensure they are working?

you can test your out bound, however in order to receive email (unless you setup a test domain and add that in your exchange server) you'll need to change the MX records.
 
You can spoof amil in to the outside of the firewall if it is set up to send on to the Exchange server.

To spoof mail:

telnet ip.ip.ip.ip 25
helo domainname.com
mail from:user@domainname.com
rcpt to:recipient@yourdomain.com
DATA
Test Mail
This is just a test.
.
quit

That should work for inbound. If you have got something like MIMESweeper in the middle i might detect this as a spoofed mail and stop it.
