Tax Change problem on Micros e7

I have a client that has a Micros e7 system and was making the mandatory tax rate changes for his pub. They followed the directions they received from Micros to the letter and now the system is not charging any tax at all. When they create a check, the tax appears on the screen, but after they print/send the check, the system wipes all the taxes off of the check. This includes items that are not subject to the tax change. Everything looks to be set up properly and should be tax accordingly, but they are now stuck with setting up an open charge to collect the correct tax.

I did see that thread and the new tax has been set up properly as far as I can tell. I am old 8700 guy, worked at Micros from 99 - 01, so I thought that perhaps he didn't activate the tax. Here is the really funky thing...none of the taxes are appearing on the check now. Even the items where no change took place. I've had him reboot the server and workstations, no luck. It might be helpful to know that when he first implemented this change, the taxes were showing up properly for about 3 hours and then the system just arbitrarily decided to remove all taxes when a new check was sent/printed.

Cool. Go to the menu item and tick the box to apply the tax to that item?
 
Did that...even tried reverting all the menu items back to the old tax rate. It is still removing the tax from the checks when they are sent/printed.
 
I remember on older Micros systems you could control the taxes that were applied to checks by the send, print check buttons etc. EG: you could have the print check button strip away all taxes. Is there any chance that was changed? Is it possible that a pre-programmed menu level or screen (happy hour, early bird) was activated and it has one of these "service" buttons present. I also remember that you could control which tax rate tables were applied based upon the order type that was active. Any changes in the order types?


 
I also remember being able to set that up in 3700, 8700 and 9700. This is my first exposure to e7 and it really looks like a stripped down version of 3700. I don't recall looking at menu levels or the print/send buttons having an option to strip out the taxes in this system, but I'll certainly look at it today.

Found the solution. Some genius that developed the directions to add the new tax, also directed the user to add the tenders to the exempt tax group. So every time they printed, sent, cashed, used a credit card, etc. the system wiped the taxes off the check.
